page breakThese engravings illustrate the Cooley system of setting milk in submerged cans. Tho cans are 20 inches deep and 8½ inches in diameter, the covers are fastened down, and the air under the rims of the covers prevents the paasage of any water into the cans. The cans are set in the water-coolers, which are lined with metal, and fitted with inlet and overflow for using flowing spring-water.
page breakThe above engraving illustrates a convenient arrangement for running off the milk from the cans. It can be mode of pine-boards, the bench about a foot wide, the sides about 3 inches high. II desired, a pipe can be arranged for conducting away the skim-milk. By the help of this board the milk of 100 cows can be skimmed by one person in less than fifteen minutes.
By the aid of these refrigerators the milk intended for transit may be cooled as soon as it leaves the cow, and before any injurious change can possibly have taken place. It has long been a well-known fact that milk is preserved in proportion to the rapidity with which it is cooled. Recent investigations have proved, beyond a doubt, that, when milk is suddenly cooled, the infusoria or vital organisms, tho cause of rapid decomposition, are destroyed, and the milk is consequently preserved.

The machine consists of a revolving vertical drum, open in centre at the top, while four partitions divide the outer part into four compartments. The drum is, for the sake of safety, placed within an outer iron case, while a special arrangement enables the operator to count the revolutions of the drum. At the bottom there are two valves for emptying the cream.
At present the cheapest. Creams from 35 to 40 gallons per hour. Is easy to keep in order.
One horse will pull it easily and do the churning at the same time.
This separator is constructed specially for small dairies with from fifteen to twenty cows, but it is also profitable in factories, as it is better to have two or three small separators than one large.
page breakThis machine possesses many points of excellence. It gives a gentle, even pressure, works rapidly, and mixes the salt thoroughly and evenly. The handle, when thrown over backwards so that the roll rests upon the bracket on the drainboard, leaves the tray for a convenient table to make up butter into balls or prints, or for running off the milk from the cans.
