Butter Sponge Cake

Butter Sponge Cake.

Three eggs,

  • 1 cupful of sugar,

  • ¾ cupful of warm water,

  • 1 cupful of pastry flower.

  • 1 teaspoon baking powder,

  • 2 teaspoonful of hot melted butter,

  • 1 teaspoonful of flavouring.

Beat the eggs and sugar together to a creamy batter, add the water, which should be only warm, not hot, then the flour sifted with the baking powder, beat very hard, and finally pour in the melted butter, which should be sizzling hot, adding the flavouring at this time. Lose no time in getting the cake into the oven, which should be of moderate temperature, 350 degrees F. Bake about 35 minutes. Excellent for either loaf or a layer cake.
